We are a Culinary Cooking School in Sorrento, Naples, Italy. The location is ideal for many different day trips. With a 10 minute walk you can catch the local train and arrive at Pompeii or Herculaneum and Naples within 30 - 45 minutes. You can walk to Sorrento, a very quaint little town, in 10 - 15 minutes. In Sorrento there are many wonderful restaurants and stores. Sorrento also has a ferry terminal where you can catch the ferry to numerous places such as the island of Capri, Ischia, Procida or the Amalfi Coast.
Cooking classes begin in the late morning or afternoon to cook a different full 4 course meal every day, which is then served for lunch or dinner at Mami Camilla. The chef, provides each student with a book of recipes so that you could follow each day's menu and take notes and ask any questions that you may have. We always give the students the opportunity to have hands on experiences with every dish we make, that's why we limit our class size to no more than 5/6 students.
The school runs all year and all classes are taught in English and Italian and every day you will learn a different menu. Most of the dishes chosen can be easily made at home and the ingredients can generally be found in your country of origin. They are surprisingly simple to prepare yet are unforgettably flavourful and will have a profound effect on your future guests. Your program will give a balanced knowledge to acquire the principal techniques for dressing the plates, making the fresh dough for pasta, pizza and bread, learn about fish, vegetables meat and legumes, ending by creating fresh and delicate pastry.
We get a great deal of pleasure from teaching the preparation of these dishes, because they are simple, yet unique in flavours and healthy in contents. You will learn from us how to find the time to organize your meals, and by doing so, see how easy it is to take care of yourself and your diet. We focus our teaching on three key factors:
- The choice of raw material: fruits, vegetables, spices, dried products, oils, etc.
- The homemade preparation of intermediate products, like sauce (Ragu’, Beciamella, Pesto), soups, conserved products, etc.
- How to handle and utilise in the right quantity the ingredients to create the final plate.
Students who wish to become professional chefs and anyone else with passion for good and healthy food, should apply to our Mediterranean and Neapolitan culinary arts program. Our master chef is a member of the Italian food Federation and thanks to its influence with local restaurants and hotels, we can provide externship opportunities. This program will ensure you improvements on your knowledge, greatly enhancing your career prospects.
The basic background and training is provided within Mami Camilla, where our specialist will coach you and make sure you will get to know the knowledge and secrets of the simplest Italian cuisine. Your chef will show you how to present and design dishes which fulfil your inspirations. Many contents on the preparation of the Italian cuisine will be thought as the preparation of the fresh pasta homemade, the original pizza preparation, sauces, gelato and many famous pastries.
