Position: Junior Chef/asst. Head Chef

Kitchen operating procedures are adhered to at all times
Security of stocks and stores are maintained at all times
Stock rotation is applied according to standard procedures
Preparation of all daily mise en place
Knives and all kitchen equipment are handled with care, and in line with best practice
Food is prepared for food presentation, in line with menu requirements and kitchen standards
Food is produced according to menu costings and wastage minimized
Inventory procedures are adhered to
Assist with stock takes and stock rotation process
Quality control and portion consistency are adhered to
Highest standards of hygiene, cleanliness and sanitation of kitchen and equipment are maintained at all
Times
Maintain a safe working environment at all times
Maintain FIFO policies and procedures along with efficient waste management
Kitchen equipment and fittings are cleaned, maintained and repaired according to company policies
Follow the Periodic Cleaning schedule
Ensure that all Municipality and HACCP related policies and procedures are adhered to at all times
Adhere to all pest control procedures
Clean and hygienic appearance is maintained at all times
Attention to detail is practiced
Effective liaison with other departments to ensure the smooth flow of customer service
Assist customers with the selection of dishes and items from the menu
Follow up on special customer requests
Report all (any) customer feedback to the Store Manager/Head Chef
Assist in ensuring that adequate stock levels are maintained
Assist the Head Chef in the overall managing of the day to day kitchen operation
Make recommendations for improvements
Resolve customer complaints to their full satisfaction
Presenting a flexible/positive attitude towards the accumulating of new skills and completion of
Challenging tasks

Required Qualification At This Level:
Educational/training:
Work requires completion of a culinary apprenticeship
Experience:
Minimum of 3 years experience as a Junior/asst. Head Chef in a similar or casual dining environment
(ideal candidates have hotel kitchen background as well)
SKILLS:
Prepare and produce quality food
Capability of operating all kitchens (related) equipment
Knowledge of Food hygiene policies and procedures
Good communication skills
Fluent English, both spoken and written is a must
Team player
