Position: Head Chef/Senior Chef
Date to be recruited: asap
Based: dubai, gcc
Occupational summary:
To delight all customers by ensuring exceptional, efficient food service is provided in the Gourmet
Station store at all times.
Work Performed:
Support the Operations Manager by developing /implementing SOP manuals
Develop menus and recipes along with the Operations Manager
Ensure that only high quality food is produced and presented in a timely manner and at optimal cost
Under hygienic conditions
Oversee the overall production of all menu items
Ensure that all Municipality and HACCP related policies and procedures are adhered to at all times
A system of controlling quality and portion consistency of food is maintained
Purchasing/Ordering policies and procedures are adhered to at all times
Security of storage and stock is maintained at all times
Inventory procedures are implemented and adhered to
Regular stock takes are implemented along with a stock rotation process
Completion of reports on stock takes and takes appropriate actions
Highest standards of hygiene, cleanliness and sanitation of kitchen and equipment are maintained at all
Times
Maintain a safe working environment at all times
Maintain FIFO policies and procedures along with efficient waste management
Control waste management by menu design and constant awareness/communication of production and
Expiry dates
Prepare reports as per senior managementfs request
Monitor pest control
Kitchen equipment and fittings are cleaned, maintained and repaired according to company policies
Develop and implement Periodic Cleaning Schedule
Effective communication with all departments to ensure a smooth flow of customer service
Train and support junior staff/co]workers on product knowledge
Assist customers with selecting items from the menu
Follow up on special customer requests
Report all customer feedback to the Store Manager
Assist in compilation of costing/forecasts and all other financial aspects of the kitchen environment
Monitor trends and customer eating behavior
Ensure that adequate stock levels are maintained
Ensure that all cost control targets are met
Overall management of the day to day kitchen operation
Identify defects against operational standard requirements
Analyze relevant reports e.G. Forecasts/budgets/average customer spend etc.
Make recommendations for improvements
Resolve customer complaints to their full satisfaction
Present a flexible/positive attitude towards the accumulating of new skills and completion of challenging

Required Qualification At This Level:
Educational/training:
Work requires completion of a culinary apprenticeship
Experience:
Minimum of 5 years experience as a Senior/ Head Chef in a similar or casual dining environment (ideal
Candidates have hotel kitchen background as well)
Previous experience in menu design
Cost control/wastage control/FIFO policies and procedures
SKILLS:
Ability to train staff
Hands on management
Strong knowledge of Food Hygiene and kitchen management
Excellent communicator with a passion for food
Fluent English, both spoken and written is a must
Menu design/Cost controlling
Capable to manage all kitchen related aspects/tasks
Team player and leader by example
