· Strong Communication Skills
· Administrative Ability and IT knowledge especially in Microsoft Excel
· Be able to think on their feet
· Organizing, Leading and Motivating the catering staff
· Stamina and ability to work under stress
· Knowledge of food and its preparation a must
· Keeping financial and administrative records
· Planning Menus in consultation with the Food Service Manager (FSM)
· Monitoring the quality of the product and services provided
· An appreciation of customer expectations
· Maintaining stock levels and ordering as required
· Interacting with customers and the FSM
· Maintaining budget control
· Knowledge in Health and Safety for the food industry and using that knowledge to provide a safe working environment for our staff.
· Knowledge in Food Safety including temperature control for all foods, chillers and freezers, sanitization, cleaning rosters etc.. and be able to produce recorded evidence on demand.

Skills Required:: |
Educational Background
· Training in Culinary Management or Hospitality Management.
· Preferably a College Degree
Qualifications
· Chefs Trade Certificate preferred but if Trade Certificate not obtained must be able to show that they have been employed in the food industry with capable cooking skills over a period of no less than 10 years.
