The Fox June 2008 – April 2009 Hyde road denchworth Oxford head chef after returning from Austria my wife and i found this beautiful old country pub in a little village just outside Oxford, we were taken on to run the kitchen and improve the quality while making sure required gross profit was reached, this we did with very good feed back from lots of returning custurmers. On a busy service we could feed 80 guest with just the two of us and a kitchen porter.
Ski val December 2007 – April 2008 Eagles Nest 39 gastigweg St Anton Am Arlberg Austria Chalet host AS research work for starting our own holiday home and cookery school business my partner and i ran the eagles nest luxury chalet for ski val. The chalet slept 12 guests and we were responsible for all the day to day running and cooking as well as all ordering and monetary controls. We received great feed back from all our guests and completed the season under all set budgets.

I was taken on to run this newly opened unique dinning pub. The place had been open 3 months and was not hitting sales targets, the gp was running at 53% and the wages were at 38% after making staff cuts and training the chefs I kept, I took the wages down to 26% brought the gp up to 65% which is what the company wanted and increased sales from a shocking 40 covers on a Saturday night, to 93 covers Friday, Saturday and Sunday as well as being full must nights of the week.

I was asked to return by the chef proprietor Scott McRae to run the kitchen for him, in my time here business has sword, the restaurant had an extension now capable of doing 120-140 on Friday and Saturday, we also won best regional food and pub of the year with green king as well as best food establishment in Buckinghamshire, along with this I managed to hit 68-70% food gp week in week out.
