InterContinental Hotel Doha
As Chef de Partie/Sous Chef, you will be under the general guidance of the executive chef and within the limits of established IC policies, procedures and food & beverage manual, assists in overseeing and directing all aspects of the bakery.
Key Responsibilities as Chef de Partie/Sous Chef:
Able to prepare all dishes in his assigned section using established recipes and plating instructions
In cojunction with the Executive Chef and Executive Sous Chef plan activities, promotions and menu implementations according to annual marketing plans
Assist the Executive Chef in compiling the annual marketing plans and budgets.
Ensures that all designated action points from daily briefings or monthly operational meetings are being followed by the individual s concerned.
Check the quality of raw materials in his assigned area, as well as their storage, handling and usage.
Conduct training on all related food preparation, hygiene and grooming standards.
Keep the Executive Chef informed of all aspects of his assigned section, including equipment, working environment, staff problems and department relations.
Ensure that all kitchen mise en place is prepared according to production and business requirements.
Check of all refrigerators and freezers at regular intervals for proper functioning and cleanliness.
Ensure constant rotation of all stocks in the kitchen.
Ensure that food wastage is kept to a minimum.
Ensure that highest standards of hygiene are always adhered to throughout food preparation process.
Ensure all equipment is maintained and cleaned regularly.
Assist in other food production areas as and when assigned.
Ensure disciplinary and grievance procedures are adhered to and followed.
Find ways to improve the efficiency of the operations which will benefit our clients.
Assist the Executive Chef in improving the food cost through strategic purchasing, without negatively affecting predetermined quality standards.
Constantly strive to reduce energy consumption within the kitchen.
Check the outlet operation during all service periods taking necessary action to correct any deviation from quality standards.
Conduct weekly equipment maintenance checks and stewarding cleanliness issues & follows up on deficiencies in a timely manner.
Plans, coordinates and supervises all menu implementations in a timely manner with recipes, photographs & staff training.
Foster positive thinking and motivation with peers & subordinates by giving active assistance on more efficient ways of running the kitchens.
Assist in the preparation and control of daily and weekly market lists.
Conducts daily outlet tours to observe operational standards and difficulties and follow them up with the Executive Chef.
Prepare weekly work schedule for subordinates.
Create and develop new dishes and recipes by keeping up with the latest market trends.
Constantly strive to improve kitchen operating procedures.
Relate guests` comments, positive or negative, to the Executive Chef and take corrective actions where necessary.
Propose and initiate when approved, new services and products for our guests.
Perform any other reasonable duties as required by the department head from time to time.

Essential:
Basic Hotelier school qualification
Bakery qualifications
6-8 years experience in an International property, within a hotel bakery
You shall be able to make bread rolls, danish pastries, dough etc
Understanding of an international hotel chain
Good leadership skills

Desirable:
Hotel Management Production Bakery licence
8-10 years experience in an international hotel bakery producing bakeries and pastries.
