Role:
Main target is to keep up the Gastronomy Standards in the kitchen facilities. He exercises strong leadership and gives a strong accent on visible management in the front area, especially during main service hours. Close co-ordination between Food & Beverage, Purchasing and Stewarding.
Responsibilities:
1)Maintains on a day-to-day basis the standards and policies of the Hotel and keeps a clear line of command
2)Assists the F&B Manager for annual planning of food production.
3)Executes test cooking for new menus.
4)Controls and analyses permanently: Quality levels of production and presentation, food cost, cleanliness, sanitation and hygiene.
5)Supervises all outside catering and in-house parties in respect of food, quality and presentation during the event.
6) Co-ordinates together with F&B changing of programs, promotions according to seasonableness
7)Is dealing favourably with complaints and avoids discussions between the kitchen and the service staff
9)Ensures regularly all preparation of food is done according to our recipes and presentation standards

| Habilidades: |
Must be thoroughly familiar with all Hotel’s Gastronomy Standards for his area
minimum 5 years experience in a 4-star hotel as an executive chef or executive sous chef
strong leadership and communication ability |
