A leading 5 Star deluxe International Hotel Chain is looking for an outgoing Executive Sous Chef to join their team in the Maldives.
The Executive Sous Chef will be responsible by working alongside the Executive Chef and following his advice in ensuring and maintaining the overall administration and operations of the Kitchen Division incl. maximization of profits and enhance customer satisfaction through establishment of quality standards while maintaining high staff morale.
Aid the Executive Chef in achieving financial success of the food & beverage department by ensuring that proper budgeting, forecasting revenue maximization and expense control procedures are in place, Follows the Executive Chefs comments and instructions in ensuring proper promotion and entertainment plans are in place and appropriate marketing initiatives are launched for the various outlets, Checks daily the set-up of quality food & beverage production operations in line with current market trends and customer requirements, Helps achieve high customer satisfaction index of food & beverage products and services which are in line with the Chain standards, Checks daily on the development of a strong cohesive team and reports back to the Executive Chef
The perfect candidate has min. 3 years as an Executive Sous Chef/Sous Chef at international top end luxury hotels/resorts, High end restaurant experience also a plus, A confident person with a proven track record in man-management, preferably, resort opening, strategic-thinking, creative outlook towards operations and generating revenues, Island experiences and living in a remote location a plus, Manages all activities in the kitchen in the Executive Chefs absence including production, stewarding and management of food productions staff, attending meetings and briefings; Ensures guest satisfaction by overseeing the highest food quality consistent with cost control and kept in line with the profit margins of the hotel kitchen; Clear, concise written and verbal communication skills; Second European Language besides English is highly desirable; Ability to communicate effectively with company leadership, team and guests across multiple locations; HACCP / Food Safety knowledge and implementation experience is a must. Single status preferred.
Assists the Executive Chef in Developing and implementing pre-opening set-up and training plan; Assists the Executive Chef in menu pricing strategies, new menu implementation and execution to maximize the average check in varying rate periods; Able to acquire and utilize effectively all internal and external resources; High focus on team: training schedules, performance appraisals, checking of schedules, hygiene procedures and documentation
Must be an aggressive, outgoing and self-motivating individual with a pleasant personality and a sense of humor; Demonstrate the disposition to help team building experience; Ensure a courteous, friendly, professional work environment; Ability to manage change effectively.
