Server / Bartender
Accountable To: Owners / General Manager / Lead Server
Knowledge: You will be expected to learn the following:
Thoroughly understand and perform all duties assigned to you by your management team.
Use good tact, manners and mature judgment in dealing with guests in all situations.
Familiarity with procedures & ability to correctly operate all equipment required to perform duties
Implement sales and customer service programs
Job Responsibilites & Duties
Address Customers Immediately~ even to say you or someone will be right there
Take new orders, serving guests, hot food promptly, greet, seat, and take payments.
Customer Service ~ know the MENU, the restaurant history, your table
SELL, SELL, SELL & UPSELL - you ARE a Salesperson - Know the menu
Always have a suggestion – drink, appetizer, entree & dessert make sure it’s possible first.
Develop and maintain high ticket average (up-selling)
Maintain high performance of service and courtesy
Satisfy guest complaints promptly, politely, & quietly
Food Preparation - salads, soups, beverages, desserts
Station Preparation – see SOP for open & close
Maintain All Areas - Table, Bar, Dish, Restaurant ~ maintain a healthy clean environment
Bus tables, clear, clean and reset tables
SIDE WORK - Duties to be performed as assigned by your management team - see SOP for open & close

“Waitstaff & Bar” Job responsibilities / SOP’s for Opening & Closing
Always begin with: outside / bar / dining room / sidework
ALL Shift START - Lunch & Dinner
PATIO: swept, umbrellas up, chairs & tables wiped
Set with s&p, sugar & candles
Outdoor rack: rolled silver, plates, napkins
Flags/signs out & doors unlocked
“please wait” sign in bar, “come in” sign outside on tables
INSIDE: Lights / fans on
Sweep if necessary - sweep foyer rug to bar
TABLES: Clean chairs & tables, Set
Sugars, S&P filled, candle holders clean, lit
BAR: check liquors & restock, Wipe & put away bar glasses
Station Side Work: ice for bar & kitchen
Prefill water glasses & pitchers in kitchen, cut lemons
Check coffee – Make airpots & back up pourers for busy days
Clean & Clear service areas; dish drop offs – near kitchen, near schedule, prep tables
Prep Olive dishes & bread baskets, fill parm’s, RP, oil & ving’s
Menus wiped - check dessert menus updated
Check/fold napkins - wrap silver
Wipe doors, windows & mirrors, high chairs
Check all paper / to-go products are stocked & organized
ALL Shift End
Tables Cleaned & reset (unset on Fri & Sun) Sugars, S&P filled, candle holders clean
Station Side Work: wipe & restock plates, glasses, silverware
Fold napkins ( min 2 full buckets)
Check /fill parm’s, RP, oil & ving’s (clean outside of oil container w/ vinegar, do not run thru dishwasher)
Wrap silver ( min 2 full buckets)
Wipe menus & trays
Clean server counter!!! & backside of line
Tilt chairs ~ Vacuum, Sweep & Mop ~ get under tables, foyer, beginning of kitchen & bathrooms
No Dirty Dishes Or Glasses are to be left!!!!
Team checkout for side work
Server report checkout with manager / Lead server
