Based at Mandarin Oriental Punta Negra, Mallorca,as the Pastry Chef de Partie, you will be responsible for overseeing the pastry section of the kitchen, ensuring that all desserts and baked goods are prepared to the highest standard and in line with the restaurant’s quality and efficiency.
This position involves managing the preparation, baking, and presentation of pastries, as well as ensuring cleanliness and adherence to food safety regulations.
As Pastry Chef de Partie, you will be responsible for the following duties:
- Prepare, bake, and present desserts, pastries, and other baked goods within your designated section.
- Supervise and train junior pastry staff to ensure high standards are maintained.
- Ensure cleanliness and hygiene standards are upheld in your section of the kitchen.
- Manage pastry stock levels, assist in ordering ingredients, and minimize waste.
- Ensure consistency in the presentation and quality of desserts, adhering to restaurant specifications.
- Collaborate with the Head Chef and Sous Chef to develop new pastry items, desserts, and seasonal offerings.
- Ensure compliance with health and safety regulations, including food safety standards.
- Assist in the development of daily specials, seasonal menus, and signature desserts.
- Work as part of a team, maintaining communication with other chefs and kitchen staff.
- Handle all pastry kitchen equipment safely and maintain it in good working conditions.
- Assist in the planning of pastry menus and preparation of ingredients.
Experience and education
- At least 2-3 years of experience working in a similar role within a high-volume, quality kitchen.
- Experience in managing a pastry section and training junior staff.
- Pastry Culinary degree or equivalent professional qualification is preferred.
- Additional food safety certifications (e.g., HACCP, food hygiene) are an advantage.
- Proficiency in Various Pastry Techniquessuch as puff pastry, laminated dough, choux pastry, cake decoration, and sugar work.
- Familiarity with specialized pastry tools and equipment (e.g., mixers, ovens, chocolate tempering machines) and their proper use and maintenance.
- Ability to read, follow, and consistently reproduce pastry recipes with precision and attention to detail.
- Proficient in the use of knives for delicate preparation, such as cutting, shaping, and garnishing desserts.
- Comprehensive knowledge of food safety standards specific to pastry kitchens, including storage, handling, and sanitation procedures for ingredients.
- Ability to manage stock levels of pastry ingredients, assist in ordering supplies, and minimize waste in the pastry section.
- Capability to work efficiently under pressure, managing multiple pastry orders while maintaining high standards of quality and presentation.
