This course goes beyond the standard and enables culinarians to develop and conserve component ingredients that can be incorporated to any chef's or pastry chef's repertoire with personal products that can be stored on a shelf freeing precious refrigerator and freezer space.
• Traditional Italian Charcuterie: Curing Meats, Sausage Making & Artisanal Salumi:
Traditional Italian Charcuterie literally brings participants first to the farm demonstrating how to identify and select livestock and then to the laboratory for hands-on production of over twenty-five types of sausages, salumi and meats that can also be personalized.
• Advanced Mediterranean Cuisine:
This course combines several aspects of modern restaurant cuisine, baking, decoration and cultural travel during one week of full immersion.
Several areas of the menu are prepared and presented including perfect base sauces, pastas and vegetarian and Mediterranean cuisine.
• Artisan Italian Gelato: Technique & Production:
This program is designed for both experienced gelato (Italian ice cream) makers and aspiring shop owners and covers every aspect of real artisan gelato production.
While the program concentrates mainly on the art of gelato making, it also outlines the parameters necessary for the operation of a gelato business.
• Pastry, Desserts & Specialty Breads:
This is the most advanced all inclusive baking and patisserie program in Italy. Designed for professionals, this course combines all aspects of modern restaurant pastry, patisserie, baking and decoration during one week of full immersion.
• Artisan Italian Cheese Making:
