Description

Assistant Commissary Manager (Food Production) oversees day‑to‑day production in the commissary by conducting a series of tests to ensure high‑quality products are produced based on set standards and ensuring that all products produced in the Commissary Center are processed according to standard specifications & quality and delivered to respective restaurants on target.

What You'll Own
  • Oversees day‑to‑day production in the commissary by conducting series of tests to ensure high‑quality products are produced based on set standards.
  • Controls underproduction and overproduction to ensure meeting production requirement to reduce waste and increase production efficiency.
  • Manages and monitors the production supervisors to ensure the efficiency of food processing workflow.
  • Monitors the food production procedures to ensure compliance with the standard recipes and the products produced as per the quality and specifications standard.
  • Responsible for raw material evaluation and storage and ensures the use of FIFO.
  • Participates in creating new recipe and introduces new products.
  • Sets the product standards, specifications, and formulation with franchisors.
  • Ensures internal hygiene procedures and quality assuring system are fully implemented in the Commissary Centre.
  • Sets the standards and specifications for raw material (Purchasing‑receiving and storage), ensures receiving raw materials according to the agreed quality standards and food safety standards.
  • Ensures all assets, facilities, and equipment within the Commissary are managed efficiently, maintained properly and operated cost‑effectively which participating in achieving successful P & L.
  • Resolves issues on product recipe compliance, distribution, and equipment problems.
  • Leads food safety team and responsible for establishing, implementing, maintaining & updating the food safety management system (ISO 22000) applied in the Commissary.
  • Take corrective actions when quality standard deviations are observed/encountered.
  • Ensures the implementation of the recording and recall system.
  • Develops technical training programs for supervisors and team members.
  • Prepares & maintains all the official documents required by the municipality.
  • Develops the food safety and quality procedures as per the requirements of the standards.
  • Plans and conducts internal food safety & quality system audits for Americana Commissaries against the YUM! Brands Global Restaurants, Inc. Standards & ISO 22000: 2018 standard.
  • Organizes the distribution routes to ensure comply in supply the restaurants' requirements on spot.
Experience, Qualifications, Skills
  • University degree in Veterinary Medicine, Microbiology, Agriculture, Food Technology.
  • Minimum of 8 years’ experience in the meat production industry.
  • Certified Food safety & Quality lead auditor.
  • Comprehensive knowledge in laboratory testing, food safety and quality standards.
  • Comprehensive knowledge in food processing and production standards.
  • In‑depth knowledge of Food safety and quality management system mainly and not only (ISO 22000 : 2018 standard, FSSC, ISO 9001).
  • In‑depth knowledge of Franchisee recipe standards and components.
  • Can effectively manage subordinates and determine training and development needs.
  • Microsoft office knowledge.
  • Language

    Skills:

    Fluent Arabic and English (Oral/Written).
  • Systematic and can work under pressure.
  • Notable analytical and problem‑solving skills.
  • Working knowledge of Codex Alimentarius rules and guidelines related to food processing.
  • Knowledge of government inspection procedures and regulations.
Shift & Working Hours

The role will follow a 12‑hour working shift, 6 days a week. Shift timings: 4:00 PM to 1:00 AM or 6:00 PM to 3:00 AM, rotating between both shifts as required.
