Responsibilities
- Prepare a wide range of Arabic salads and cold mezze (e.g., tabbouleh, fattoush, tahini, baba ghanoush, vine leaves, moutabbal, coleslaw, hummus variations).
- Follow standard recipes, portion sizes, and presentation guidelines.
- Ensure freshness of ingredients through proper storage, rotation (FIFO), and labeling.
- Assist in menu development for new salads and seasonal mezze items.
- Maintain a clean and organized cold kitchen workstation at all times.
- Coordinate with the main kitchen for stock requests and ingredient needs.
- Check daily mise-en-place and ensure readiness for service.
- Monitor food quality, taste, and consistency throughout the shift.
- Follow all food safety and hygiene procedures (HACCP standards).
- 5 years’ experience in Arabic cuisine, specifically cold kitchen/salads.
- Strong knowledge of traditional Arabic salads, ingredients, and preparation techniques.
- Attention to detail in taste, texture, and presentation.
- Ability to work in fast-paced, high-volume environments.
- Basic knowledge of food safety and hygiene (certification preferred)
