Culinary Intern - Pastry

About the Role

JW Marriott Marquis Dubai is seeking a dedicated Kitchen Cook to join our award‑winning Food & Beverage team. The role involves preparing a wide range of dishes, maintaining quality and hygiene standards, and supporting the kitchen crew during busy periods.

Prepare special meals or substitute items, regulate oven, broiler, grill and roaster temperatures, pull and thaw food from freezer storage, ensure proper portioning, arrangement and garnish, maintain food logs, monitor quality and quantity of food prepared, and communicate assistance needs to the Chef.

• Maintain food logs and use HACCP forms and production charts to track quality.
• Ensure correct temperature of appliances and food using thermostats and thermometers; monitor freezer systems and report issues.
• Operate ovens, stoves, grills, microwaves, and fryers to prepare foods.
• Wash, disinfect kitchen areas, tools, knives and equipment to meet sanitation standards.
• Coordinate with Kitchen Staff, provide assistance, and supply needed items.
• Prepare ingredients for cooking, including portioning, chopping, and storing.
• Supervise and coordinate activities of cooks and workers in food preparation.
• Prepare special meals or substitutes to satisfy guest requests, and innovate with daily specials.
• Ensure compliance with pest control guidelines and report problems to management.
• Maintain a clean and organized work station with all required mise en place.
• Perform taste, smell, and visual checks to confirm foods are cooked to standards.
