About the JobBased in Mandarin Oriental Jakarta, the Demi chef de Partie is responsible for assisting senior chefs in food preparation and other related tasks. The Demi chef de Partie reports to the Sous Chef (Li Feng Chinese Restaurant).
Responsibilities- Supervise the assigned station within Li Feng Chinese Restaurant, ensuring efficient management according to established concept statements.
- Oversee assigned Commis de Cuisine and kitchen trainees.
- Prepare menus using quality, available, and seasonal ingredients, and complete daily and weekly market lists.
- Perform opening and closing procedures for the assigned station.
- Carry out additional duties as reasonably requested by the Executive Chinese Chef.
- Organize food production in a cost‑effective and hygienic manner.
- Identify opportunities for reducing costs without affecting the level of service or product received by our guests.
- Identify opportunities for improving the efficiency of the operation of the assigned workstation that will benefit our guests.
- Ensure that Fire Life Health Safety and Security company standards and HACCP Standards are maintained and carried out, monitored regularly to assist in scoring 100% on the MOHG health and safety audit.
- Use the Colleague Handbook to understand consistent communication rules and regulations with the team.
- Develop skills and knowledge in food preparation and presentation.
- High School Diploma or Equivalent
- Two‑year degree or Apprenticeship
- Minimum of 1 year experience in the same position (Demi Chef de Partie Li Feng Chinese Restaurant) and 2 years as Commis de Cuisine preferably within the hospitality industry.
- Thorough knowledge of gastronomy.
- Extensive knowledge of kitchen equipment.
- Working knowledge of computers and basic software.
- Ability to dictate responsibility, pay attention to detail, handle multiple tasks and show a high level of patience.
- Good written and verbal command of English.
- Pleasant and outgoing personality.
- Passionate, creative and an excellent hands‑on trainer.
- Basic computer and software use.
- Stand/Walk 8‑12 hours a day.
