Quality Assurance Manager
To ensure food safety, product quality, and consistency across all restaurant branches by enforcing approved standards, SOPs, and food safety systems, and by preventing individual practices that may compromise brand consistency or customer safety.
Scope of Responsibility- Kitchens and preparation areas
- Storage areas and warehouses
- Suppliers (quality and food safety compliance only)
Food Safety
- Ensure food safety compliance across all stages: receiving, storage, preparation, and service.
- Ensure restaurants are free from pest and hygiene violations.
- Oversee pest control programs with approved vendors.
- Take immediate corrective actions in any food safety risk situation.
Quality & Product Consistency
- Ensure strict adherence to approved recipes with no individual modifications.
- Ingredient measurements and plating/presentation.
- Conduct regular and surprise product quality and taste checks to prevent variations between branches.
- Conduct regular and unannounced inspections of storage areas.
Staff Compliance
- Ensure staff compliance with personal hygiene, uniform, grooming, handwashing, and glove usage.
- Report and follow up on hygiene-related violations.
SOPs & Standards
- Develop, update, and enforce quality and food safety manuals.
- Ensure all documented standards are implemented in daily operations.
- Train operational teams on food safety and quality standards.
- Simplify procedures without compromising safety or quality.
Audits, Inspections & Reporting
- Perform regular and surprise field audits across branches.
- Prepare detailed reports covering corrective and preventive actions.
- Submit reports to senior management and follow up to ensure resolution.
New Openings & Expansion
- Lead food safety and quality readiness for new restaurant openings.
- Approve kitchens and storage areas before opening.
- Train opening teams on approved standards.
- Ensure no restaurant starts operations without passing food safety and quality audits.
- Stop any operation or product posing a food safety risk.
- Reject non-compliant products or suppliers.
- Recommend suspension of menu items or operational processes.
- Request retraining or corrective action for staff.
- 4–6 years of experience in Quality Management.
- Strong practical knowledge of field-based experience (not desk-based).
