• 3+ years in a 4/5-star hotel or reputable restaurant
• Experience leading a team of 8+ kitchen staff
• Strong HACCP knowledge and food hygiene level 2
• Confident with menu planning and costing
• Level 2 culinary qualification (or equivalent)
