Description
- Cleans tables and chairs
- Removes trays from tables
- Restocks table condiments
- Vacuum and sweep carpets, sweep and mop floors
- Set up and tear down dishwasher
- Unload busser carts
- Pre-scrapes and stacks dishes
- Pull, stack and ensure the cleanliness of dishes, place in racks for use on serving line
- Ensures serving areas are properly stocked with service items for patrons
- Perform temperature checks on all line products placed for service
- Ensure cleanliness of line and surrounding areas to include floor during serving hours
- Ensure product replenishment for the line, inform cooks on items prior to running out of product
- Responsible for serving line maintenance as outlined in the Performance Work Statement
- Responsible for cleaning standards as outlined in Performance Work Statement
- Trash and garbage removal
- Sweep/ mop kitchen area as required for maintaining standards in the PWS
- Deep clean kitchen equipment, ovens and overhead hoods as outlined in PWS
- Understanding of minimum temperatures for wash, rinse and sanitation water
- Required minimum temperature of mechanical washing equipment
- Proper drying and racking techniques to ensure complete drying of wares
- Pots and pans washing area including counters, sinks and machinery
- Pots and pans storage racks, shelving and holding inserts used for utensil storage
- Cleaning of back dock and stairs
- Customer entrances to ensure safety and sanitation issues are maintained
- Removal and cleaning of waste cans, bussing carts and portable holding units
- Arrangement of outside storage items in a safe, clean and presentable manner
