Job Description – Chef de Partie (Pastry & Chocolate)

Fouz Chocolate Factory is looking for a skilled and passionate Chef de Partie – Pastry & Chocolate to join our production team.

The ideal candidate should have strong hands‑on experience in premium pastry, cakes, chocolate production, and finishing techniques
. The role requires excellent attention to detail, consistency, hygiene, organization, and the ability to maintain high‑quality standards during both regular production and high‑volume seasonal periods.

Key Responsibilities
  • Prepare and produce premium cakes, pastries, desserts, chocolates, pralines, ganaches, fillings, and other confectionery products according to approved recipes and standards.
  • Perform chocolate tempering, moulding, filling, enrobing, decorating, and finishing with consistent results.
  • Prepare cake components including sponges, creams, mousses, ganaches, glazes, fillings, and decorations.
  • Ensure every product follows the company's required taste, texture, appearance, portion size, and presentation standards

  • Follow recipes accurately and maintain consistency between production batches.
  • Organize daily mise en place and complete assigned production according to the production schedule.
  • Support the Head Chef with new product development, recipe testing, seasonal collections, and product improvements.
  • Monitor ingredient quality and report any issues with raw materials immediately.
  • Maintain proper storage, labeling, FIFO/FEFO procedures, temperature control, and stock rotation.
  • Minimize production waste and use ingredients efficiently while maintaining quality.
  • Maintain excellent hygiene and food‑safety standards throughout the production area.
  • Properly clean and maintain pastry and chocolate equipment, moulds, tools, and workstations.
  • Assist in monitoring stock levels and communicate ingredient requirements before shortages occur.
  • Guide and supervise Commis Chefs and junior production staff when required.
  • Work efficiently during high‑volume periods including Ramadan, Eid, UAE National Day, corporate orders, and seasonal gifting periods
    .
  • Follow company SOPs, food‑safety requirements, and Abu Dhabi food‑control regulations.
Required Skills & Experience
  • Minimum 2–4 years of professional pastry and/or chocolate experience
    , preferably in a premium chocolate shop, pastry kitchen, luxury hotel, bakery, or high‑end dessert production environment.
  • Strong knowledge of chocolate tempering and crystallization
    .
  • Experience with chocolate moulding, pralines, ganaches, fillings, and chocolate decorations.
  • Good knowledge of modern pastry and cake production.
  • Ability to understand and follow standardized recipes accurately.
  • Strong finishing and presentation skills.
  • Understanding of food safety, hygiene, allergen control, and proper storage procedures.
  • Ability to work accurately under pressure and meet production deadlines.
  • Good organizational and teamwork skills.
  • Experience using professional chocolate and pastry equipment is an advantage.
