Food Safety Hygiene

• Ensure food is prepared, stored, transported and served safely
• Monitor personal hygiene and PPE compliance of food handlers
• Ensure proper cleaning and sanitization of kitchen and dining areas

• Monitor cooking hot-holding cold-storage and serving temperatures
• Maintain daily temperature monitoring records

• Conduct regular inspections of kitchens mess halls stores refrigerators freezers and food transport vehicles
• Identify non-conformities and follow up on corrective actions until close-out
• Ensure compliance with applicable

• Ensure compliance with applicable ADAFSA UAE and project food-safety requirements

• Check food deliveries for quality expiry dates packaging condition and required temperatures
• Ensure proper segregation of raw and cooked food
• Apply FIFO FEFO principles

• Maintain inspection checklists temperature logs cleaning records pest-control records water-test reports food-handler records and corrective-action records
• Prepare audit evidence and close-out documentation

• Verify food-handler medical fitness and required food-safety training certificates
• Conduct hygiene awareness toolbox talks for kitchen staff

• Monitor pest-control activities and ensure corrective actions are completed
• Ensure proper waste segregation storage and disposal

• Monitor drinking-water stations coolers filters and cleanliness
• Ensure water testing and filter-maintenance records are maintained

• Investigate food-quality and hygiene complaints
• Record complaints and ensure appropriate corrective actions are implemented and closed

• Support internal client and regulatory inspections
• Prepare inspection reports recommendations corrective actions and close-out evidence
• Escalate critical food-safety risks immediately to management
