The Chef de Partie is a full-time, non-management culinary opportunity with The Ritz-Carlton in Abu Dhabi, United Arab Emirates. The role is responsible for preparing and cooking food according to established recipes, quality standards, presentation requirements, and food preparation checklists while helping maintain consistent kitchen operations. Alongside hands‑on food preparation, the position monitors food quality and quantity, maintains appropriate portions and presentation, communicates menu availability to service teams, and supports management with employee training, scheduling, evaluation, coaching, and motivation.

- Prepare and cook food according to established recipes, quality standards, presentation standards, and preparation checklists.
- Prepare special meals, substitute items, and cold foods as required.
- Regulate the temperature of ovens, broilers, grills, and roasters during food preparation.
- Transfer food from freezer storage for safe thawing under refrigeration.
- Maintain appropriate food portions, arrangement, and garnishing.
- Monitor the quality and quantity of food being prepared.
- Maintain required food logs accurately.
- Inform the Chef when additional assistance is needed during busy service periods.
- Identify excess food items and inform the Chef so they can be considered for daily specials.
- Communicate menu specials and unavailable items to Food and Beverage service colleagues.
- Check prepared food to ensure required quality standards are maintained.
Although this is a non‑management position, the Chef de Partie assists management with selected team activities. Responsibilities may include supporting hiring, training, scheduling, employee evaluation, counseling, discipline, motivation, and coaching. The role also serves as a professional example in the kitchen, maintains positive working relationships, supports shared team goals, and responds appropriately to concerns raised by colleagues.

The Chef de Partie must follow company, safety, and security policies and procedures, complete required safety training and certifications, and report maintenance requirements, accidents, injuries, and unsafe working conditions to management. Consistent adherence to food quality expectations, professional communication, personal presentation, and workplace standards is essential throughout daily kitchen operations.
Physical RequirementsThe position involves standing, sitting, or walking for extended periods and performing regular hands‑on kitchen duties. It requires reaching overhead and below the knees and movements such as bending, twisting, pulling, and stooping. Candidates must also be able to move, lift, carry, push, pull, and place objects weighing up to 25 pounds without assistance.
