Pasta Chef

Sagra is an independent Italian laboratory and restaurant in Dubai, specializing in fresh pasta made from scratch
. We are looking for a skilled and hands‑on Fresh Pasta Chef to join our kitchen team in Jumeirah ready to start in September.

Key Responsibilities

• Produce fresh pasta daily, including egg pasta, filled pasta, long pasta, gnocchi and semolina‑based shapes.
• Prepare doughs, fillings and sauces according to Sagra’s recipes and quality standards.
• Shape pasta by hand and operate professional pasta‑making equipment.
• Cook and plate pasta dishes accurately and efficiently during service.
• Maintain consistency in portioning, texture, taste and presentation.
• Organize daily production according to service and stock requirements.
• Store, label and rotate ingredients and finished products correctly.
• Clean and maintain pasta machines, equipment and the production area.
• Follow all food‑safety, hygiene and allergen‑handling procedures.
• Minimize waste and use ingredients responsibly.
• Support the Head Chef and the wider kitchen team in daily operations.

Requirements

• Minimum 4 years of professional kitchen experience
  , preferably as a Chef de Partie.
• Proven hands‑on experience making fresh pasta from scratch.
• Good understanding of dough consistency, hydration, resting, shaping and cooking.
• Experience with filled pasta and professional pasta machines is strongly preferred.
• Ability to follow recipes precisely and maintain consistent standards.
• Strong organization, cleanliness and time‑management skills.
• Able to work efficiently during busy service periods.
• Reliable, collaborative and willing to take responsibility for assigned production.
• Good working English
• Basic Food Handling certificate
• Pastry or bakery experience is an advantage, but does not replace fresh‑pasta experience.
