Captain Waiter – WSET Level 2

We are looking for passionate and knowledgeable Captains and Servers to join the opening team and help establish a high-performing Front-of-House operation that delivers an exceptional guest experience.

The Captain / Server is responsible for delivering professional, knowledgeable, and attentive table service while creating a memorable guest experience aligned with Momofuku's standards and personality.

Candidates should have strong knowledge of food and beverage, excellent communication skills, and a genuine passion for hospitality. WSET Level 2 or Level 3 certification is required, with strong wine knowledge and the ability to confidently engage guests on beverage recommendations.

• Welcome and engage guests in a confident and personable manner.
• Demonstrate excellent knowledge of the menu, ingredients, preparation methods, allergens, and beverage offerings.
• Provide informed recommendations based on guest preferences.
• Anticipate guest needs and maintain a high level of attention to detail.
• Handle guest requests and concerns professionally and escalated issues when required.
• Build strong relationships with guests and contribute to memorable dining experiences.
• Food & Beverage Knowledge
• Demonstrate strong knowledge of food, wine, spirits, cocktails, beer, and other beverage offerings.
• Confidently recommend wine and beverage pairings based on the menu and guest preferences.
• Explain wine characteristics, regions, grape varieties, and service recommendations accurately.
• Maintain current knowledge of the restaurant's menu and beverage program.
• Participate in regular tastings, product training, and menu briefings.
• Stay informed about new products, seasonal offerings, and changes to the menu.

• Provide professional wine service in accordance with established standards.
• Present and open wine correctly and confidently.
• Maintain appropriate wine service temperature and handling.
• Assist guests with wine selections based on their preferences and budget.
• Ensure proper glassware and service standards are maintained.
• Communicate effectively with the Bar and Beverage team regarding guest requirements.

In addition to the responsibilities above, Captains will:

• Lead the service of an assigned section and ensure consistent service standards.
• Coordinate with Servers, Runners, Host/Hostess, Kitchen, and Bar teams to ensure smooth service.
• Support and guide Servers during service.
• Conduct or assist with pre-shift briefings and ensure the team is prepared.
• Monitor table progress, service timing, and guest satisfaction.
• Assist management with service recovery and guest requests.
• Support training and coaching of junior team members.
• Take responsibility for maintaining service standards within the assigned section.

• Efficiently manage assigned tables and service responsibilities.
• Follow the established sequence of service and restaurant standards.
• Accurately take orders and communicate them to the relevant departments.
• Ensure food and beverages are delivered correctly and in a timely manner.
• Maintain table presentation and cleanliness throughout the guest experience.
• Support Captains and the wider Front-of-House team during service.
