Job Description

Every memorable dining experience at Fairmont Hotels and Resorts begins behind the scenes with our Culinary team’s commitment to safe, efficient operations and exceptional cuisine. As Commis 1, the care you devote to all aspects of food preparation will result in the creation of truly spectacular fare.

Key Responsibilities
  • Prepare cold dishes such as salads, dressings, appetizers, cold starters, and buffet items according to standard recipes.
  • Assist in daily mise‑en‑place to ensure smooth kitchen operations.
  • Ensure consistency in taste, quality, and presentation of all cold kitchen items.
  • Maintain cleanliness and organization of the cold kitchen section in compliance with HACCP standards.
  • Store food items correctly, ensuring proper labeling, dating, and rotation (FIFO).
  • Monitor food quality and freshness, reporting any issues to the Chef de Partie.
  • Assist with buffet setup, replenishment, and breakdown as required.
  • Support Commis and Demi Chefs within the section when needed.
  • Follow all health, safety, and food hygiene regulations.
Qualifications
  • Diploma or certificate in Culinary Arts or equivalent.
  • Minimum 1–2 years of experience in a cold kitchen or garde manger section.
  • Knowledge of cold food preparation, plating, and basic carving techniques.
  • Strong attention to detail and presentation standards.
  • Ability to work efficiently in a fast‑paced environment.
  • Good teamwork and communication skills.
  • Flexibility to work shifts, weekends, and public holidays.
Physical Requirements
  • Ability to stand for extended periods.
  • Comfortable working in cold storage and busy kitchen environments.
