Overview
The Nothing Bundt Cakes (NbC) Bakery Manager directs the team and day-to-day operation, including all aspects of the guest and employee experience, cake production, brand and merchandise presentation, staff retention and morale, P&L management, and inventory control. The ultimate objective is to drive sales, profitability and employee retention while ensuring the highest quality cakes, a warm welcoming environment, and superior service are consistently provided to guests and employees.
The Bakery Manager exemplifies NbC core values and serves as the key culture carrier and strong decision maker bringing joy to the bakery and beyond in the community, while building the team’s commitment to our guests and the NbC brand. This role is conceptually considered as the “mini-CEO” of the entire bakery, the “go to” for all aspects of driving financial health and effective employee engagement.

Accountabilities/Duties:
- Expectations are to lead and excel in team leadership, business operations and marketing to drive sales, operational excellence and employee morale.
- Manages opening and closing of the bakery, including cash-drawer balancing and bank deposits.
- Creates and communicates weekly sales productivity goals, cake production plan, and team schedule, and adjusts bakery coverage based on changing business trends.
- Sets inventory par levels based on production demand and sales forecast, monitors stock levels, processes weekly supply orders and conducts monthly inventory.
- Drives profitability by managing controllable expenses, including labor, COGS, and supplies.
- Ensures NbC product, service, bakery environment standards are upheld consistently, with a focus on food safety and health guidelines.
- Manages special-order fulfillment via web and email for individual guests and corporate accounts as well as large, complex orders and deliveries.
- Ensures all administrative duties are completed, including time and labor processing, sales reporting, and basic accounting procedures.
- Coordinates local marketing initiatives to increase brand visibility and engage in brand-aligned events.
- Maintains hands-on knowledge of all bakery roles and steps in to perform various responsibilities as business needs dictate.
- Exhibits strong leadership skills, with the ability to engage, empower, and motivate a team.
- Executes independent decision making with strong critical thinking skills to drive business goals.

- Stays up to date on all employee readiness charts, identifying and fostering the growth of team members ready to move forward within the NbC organizational structure.
- Provides continuous coaching, delivers constructive feedback, conducts quarterly reviews, and addresses performance issues promptly and effectively.
- Delineates the role of Manager, driving chain of command by assigning specific responsibilities to support ongoing leadership of the bakery team and operation.
- Ensures that 1-on-1 meetings are consistently completed and productive, focusing on development and performance.
- Administers daily team huddles to align the team and communicate goals for the day.
- Holds team members accountable to NbC expectations, values, and performance standards, ensuring all actions align with the bakery’s core values.
