Program Mission
The Agricultural Research Service (ARS) is the U.S. Department of Agriculture's chief scientific in‑house research agency with a mission to find solutions to agricultural problems that affect Americans every day. ARS delivers cutting‑edge scientific tools and innovative solutions for American farmers, producers, industry, and communities.
Research Project
- Profile a set of phytochemicals in a limited set of foods.
- Determine the impact of those phytochemicals on the digestion of starch in a biomimetic in‑vitro digestion.
- Develop an objective scale using known alpha‑tubulin inhibitors (e.g., acarbose, pepstatin) that correlates phytochemical profile features to hydrolytic inhibition.
Learning Objectives
- Enzymatic, chromatographic and related methods for the analysis of phytochemicals, dietary fiber and other carbohydrates.
- Analytical method validation, including assessment of analytical figures of merit, robustness, and method detection limits.
- Statistical methods used to evaluate assay variability in nutrition science.

Eligibility & Benefits
Participants will not become employees of USDA, ARS, DOE, or ORISE and receive no employment‑related benefits. Proof of health insurance is required for participation and can be obtained through ORISE.
