• Managing, in conjunction with the Executive Pastry Chef, the inventory, control of all equipment and tools required for events and restaurants
• Prepare and order all items for all menus, creates order sheets and inventory systems to always ensure proper stock levels
• Supports on creation of a weekly schedule for all Pastry Associates, managing payroll
• Supports and monitors execution and delivery of the amenity program for the resort
• Attend BEO meetings, in absence of Executive Pastry Chef communicate information to Pastry department, oversee pastry production flow and adjust in order to adhere to control procedures for cost and quality
• Monitor to ensure proper receiving, storage (including temperature setting) and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating, and placing items in proper containers of kitchen and service
• Check to see that all equipment in the kitchen is clean and in proper working condition, review daily cleanliness practices with Culinary and Stewarding teams and keep up with daily cleaning schedule
• Ensure the department abides by all safety and sanitation policies
• Have the desire to create WOW moments
• Perform additional duties as assigned that may be outside the scope of duties, based on business needs

• A minimum of two year s of previous pastry experience
• Knowledge of baking and pastry
• Ability to work a flexible schedule including nights, weekends and holidays
• Luxury hotel experience, a plus
