The Quality Assurance Technician is responsible for monitoring and documenting that GMPs, HACCP, finished product specifications, process sheets and/or SOPs are followed throughout production to achieve high quality products.

This position requires knowledge of standard operating procedures (SOPs), GMPs, normal operating procedures, and food safety (HACCP). It is for our swing shift (Wed.

- Sat. 5:15 p.m.

- 5:30 a.m.).

General responsibilities include monitoring and documenting adherence to GMPs, HACCP, and SOPs; performing preoperative inspections of equipment and facility; monitoring and record‑keeping of inspections; ATP swabs; operational inspections – facility housekeeping; employee practices; cleanliness of equipment, tools, and utensils; boot foamers inspection; response to foreign material incidents; product hold/segregation/release; product sampling/ microbiological testing; thermometer calibration; scale calibration; internal plant audits.

• Cutting room – Inspect incoming raw chicken breasts and dark meat for condition, temperature, bones, skin, veins, and connective tissue; ensure safe handling and temperature maintenance during cutting and marinating.
• Fry line – Ensure cooked/baked products are cooked at required times and temperatures; monitor physical aspects such as sizing, uniformity, defects; weigh samples and record in processing and finished product grade sheet.
• Packaging room – Document control of cooling/freeze and packaging processes; ensure products are cooled/frozen to required times/temperatures; verify metal detector operation; execute other duties as assigned.

Good communication skills; must read and write English, math and computer skills; detail oriented and positive attitude; high school diploma or equivalent.
