Description of the research activity:
Microbiological, chemical, and nutritional characterization of the selected by‑products to ensure their suitability as substrates for microbial growth and process reproducibility.
Mixed starter selection based on fermentation kinetics, key enzymatic activities, and production of nutritionally relevant functional compounds.
Definition of the key parameters of solid and liquid state fermentation to enhance hydrolysis of complex carbohydrates and proteins and functional compound release.
Use of bioreactors.
