What is Pagu? Pagu is a Michelin Bib Gourmand award‑winning Spanish‑Japanese tapas restaurant, led by James‑Beard‑Semifinalist Chef/Owner Tracy Chang, located in Cambridge’s innovation hub. We serve dinner seven days a week, take‑out, patio dining, using local ingredients and inspiration from renowned cuisine.

Responsibilities:
- Team: willingness to help, contribute new ideas, flexibility with changes, clear, honest communication with team members, managers and suppliers, find ways to challenge and motivate yourself and others, anticipate needs before they arise, read BEOs and anticipate event preparation.
- Operations: efficient time management, work clean, organized and independently, check orders and maintain quality, produce consistently high quality food following Pagu standard operating procedures and recipes.
- Product: knowledge of ingredients and techniques, understand how to follow a recipe and properly label, date, refrigerate or freeze mise‑en‑place, manage oven and fryer temperatures for frying, steaming, braising, searing, roasting, implement cooking techniques such as oven braising, baking, steaming, sautéing, caramelizing, understand how to utilize and maintain equipment.
- Financials: basic understanding of food waste management.
