A well-established restaurant at the V&A Waterfront is looking for a strong, hands-on Kitchen Manager to lead back-of-house operations in a high-volume environment. You’ll be responsible for kitchen performance, food quality and consistency, team leadership, stock and cost control, hygiene compliance, and smooth daily service.
Key responsibilities
- Manage day-to-day BOH operations to ensure fast, consistent, high-quality service
- Lead, train, and motivate the kitchen team (chefs, prep, scullers) with clear standards and accountability
- Ensure food quality, portion control, plating consistency, and recipe adherence
- Plan and manage kitchen rosters, shift coverage, and performance management
- Control food costs: ordering, receiving, stock rotation (FIFO), wastage reduction, and variance management
- Oversee supplier communication, ordering schedules, and stock levels to support service needs
- Maintain strict hygiene and safety standards (cleanliness, temperature logs, storage, labeling, allergen awareness)
- Ensure equipment is maintained and issues are reported/escalated promptly
- Coordinate closely with FOH management to manage service flow, timing, and guest expectations
- Complete required daily/weekly admin: stock counts, prep lists, production planning, and reporting
- Run pre-service prep planning and service execution during peak periods
- Conduct daily kitchen checks (cleanliness, fridges/freezers, labeling, holding temps)
- Manage pass communication and service pace
- Monitor prep levels and adjust production based on trade
- Conduct receiving checks and ensure correct storage and rotation
- Coach staff on standards, speed, and consistency
Position Requirements
High School,
5+ Years
work experience Requirements
- Minimum 5 years’ kitchen management experience in a high-volume restaurant environment
- Strong leadership and people-management skills
- Proven experience with ordering, stock control, cost control, and kitchen admin
- Solid understanding of food safety, hygiene, and operational compliance
- Calm under pressure, organized, and solutions-focused
- Able to work shifts, weekends, and public holidays
- Working rights in South Africa
- Already based in Cape Town
