Objectives of the RoleAs our barDuty Manager, you’ll play a key role in leading Solina's bar operation while supporting the wider day-to-day running of the restaurant.
You’ll lead shifts, work hands on behind the bar and ensure every drink is made quickly, consistently and to specification. You’ll bring energy to the team, create a brilliant atmosphere and help grow our wet sales through confident recommendations and excellent product knowledge.
You’ll also be comfortable taking responsibility for the full restaurant when senior management is not present.
Key Responsibilities- Lead smooth, well-organised shifts, with a particular focus on bar performance and drinks service.
- Work confidently behind the bar during busy periods, setting the pace and maintaining high standards.
- Prepare and serve cocktails, wines, beers, spirits and non-alcoholic drinks accurately and efficiently.
- Ensure all drinks are made to specification, presented consistently and served using the correct glassware and garnish.
- Deliver engaging shift briefings covering bookings, sales opportunities, drinks focuses and operational priorities.
- Create a lively, welcoming bar environment that encourages guests to stay for another drink.
- Build wet sales through confident recommendations, upselling and strong knowledge of the drinks menu.
- Monitor ticket times, service flow and communication between the bar, floor and kitchen.
- Maintain excellent standards of bar cleanliness, organisation, preparation and presentation.
- Oversee opening and closing procedures, including bar setup, cash handling, cleaning and security checks.
- Support drinks ordering, stock rotation, deliveries, transfers, line checks and regular stock counts.
- Monitor wastage, over-pouring and stock variances, taking action to protect margins.
- Ensure cocktail batches, garnishes, syrups and other bar preparations are completed correctly and safely.
- Maintain licensing, Challenge 25, food safety, health and safety, allergen and responsible-service standards.
- Respond confidently and professionally to guest feedback.
- Support the wider front-of-house team and take responsibility for the restaurant when required.
- Lead from the bar and set a positive example through pace, professionalism and attention to detail.
- Train team members on cocktail specifications, wine, beer, spirits, responsible alcohol service and confident recommendations.
- Coach team members during shifts and provide clear, constructive feedback.
- Support new team members through structured bar training and practical sign-offs.
- Encourage strong communication and teamwork between the bar, floor and kitchen.
- Recognise great performance and help team members build their confidence and drinks knowledge.
- Create an inclusive, supportive and enjoyable working environment.
- Previous experience as a bar supervisor, team leader or duty manager in a busy hospitality environment.
- Confidence preparing cocktails and working efficiently during high-volume services.
- Strong knowledge of spirits, wine, beer and responsible alcohol service.
- Experience leading shifts and supporting a bar or restaurant team.
- A good understanding of stock control, ordering, wastage and cash handling.
- A positive, calm and hands-on leadership style.
- Strong communication, organisation and attention to detail.
- Confidence making decisions and responding to operational challenges.
