This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 8 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar).

* About the role:

** We are seeking a dedicated and enthusiastic Commis Sommelier to join our award-winning team. This is a fantastic opportunity for someone looking to begin or grow their career in wine service, working alongside experienced sommeliers and hospitality professionals in a vibrant and supportive environment.
** Please note that this role is expected to commence in early February 2026.

* What you will do:

*** Assist with wine service during lunch and dinner.
* Prepare and maintain wine stations and tools.
* Support cellar management, including stock rotation, inventory, and deliveries
* Learn and grow your wine knowledge through tastings, training, and mentorship
* Engage with guests to provide thoughtful recommendations and enhance their dining experience
* Uphold the highest standards of service, presentation, and professionalism

* What you bring:

*** Previous experience in a similar high-end restaurant as a Commis Sommelier.
* Strong communication skills and fluency in English, both written and spoken.
* Immaculate personal presentation and a passion for hospitality.
* WSET level 2 preferred, or studying towards
* All applicants must hold the right to work in the UK.
** Schedule and hours:
*** This is a full-time position, contracted at 40 hours per week
* Wine service is both lunch and dinner, 7 days a week
* Candidates must be flexible to work mornings, evenings and weekends
