Fundamental Hospitality is seeking an experienced and passionate Head Waiter/Waitress to join our team in London. This is an exciting opportunity to work at one of our three acclaimed venues:
Gaia, La Maison Ani, and Shanghai Me.

• Gaia – A Greek-Mediterranean inspired dining destination, celebrated for its refined seafood dishes and vibrant atmosphere.
• La Maison Ani – A modern Parisian-style brasserie blending French elegance with contemporary flair, perfect for all-day dining.
• Shanghai Me – A glamorous restaurant inspired by 1930s Shanghai, offering bold Asian flavours and stylish, high-energy surroundings.

As a Head Waiter/Waitress, you will play a pivotal role in ensuring an exceptional guest experience. Overseeing service flow, you’ll support and guide the front‑of‑house team, coordinate order taking, and maintain smooth communication between the floor and the kitchen.

A successful Head Waiter/Waitress will demonstrate confidence, attention to detail, and a strong ability to lead service in a busy and refined environment.

• Proven experience as a Head Waiter/Waitress or senior front‑of‑house position in a high‑end or luxury setting.
• Exceptional communication and guest service skills.
• Strong ability to manage service tempo, table turnover, and team coordination.
• Professionalism, charisma, and a genuine passion for hospitality.
• Ability to remain calm and efficient in a fast‑paced environment.
