• Prepare and assemble sushi rolls, nigiri, sashimi, and other sushi dishes according to traditional recipes and standards.
• Work in a fast-paced open plan sushi bar, ensuring every piece is crafted with precision, creativity and attention to detail.
• Maintain high quality standards during peak hours and uphold sushi-making techniques and presentation.
• Manage inventory of sushi ingredients and supplies, and coordinate ordering as needed.
• Maintain cleanliness and organisation of the sushi station, including knives and other equipment.

• Proven experience as a Sushi Chef or similar role in a high-volume restaurant or sushi bar.
• Strong sushi-making skills with a focus on traditional techniques and excellent knife skills.
• Ability to work efficiently under pressure in a fast-paced environment.
• Knowledge of sushi ingredients, sourcing, and quality control; stay updated on trends and techniques.
• Ability to remain calm and professional in an open kitchen.
