Overview

- Supervises day-to-day operations of the kitchen by instructing and participating in the preparation, cooking, and presentation of nutritional meals and snacks in accordance with established guidelines and schedules; ensures all meals are prepared and served in a safe and presentable manner.
- Supervises and participates in the cleaning of kitchen facilities, equipment, and appliances, ensuring compliance with Salvation Army policies, procedures, and local, state and federal regulations; monitors the inventory of kitchen supplies and food to maintain adequate levels.
- Provides recommendations on hiring, discipline, and termination of employees; evaluates employees under his/her authority.
- Plans menus and purchases food and supplies necessary for the preparation and serving of nutritional meals.
- Supervises food service personnel and tests food for proper cooking by tasting, smelling, and piercing with a fork.
- Supervises and participates in carving meats, providing proper portions, adding gravies and sauces, and applying garnishes.
- Supervises and participates in washing, peeling, cutting, and shredding vegetables and fruits; provides hiring/termination recommendations regarding subordinate employees.
- Ensures sufficient food is prepared for the number of people to be served and that meals are prepared in a timely, efficient, effective and economical manner.
- Supervises and participates in serving food and beverages in a presentable manner; prepares plates for infants or individuals requiring additional assistance.
- Supervises and participates in setting tables with plates, napkins, utensils, and buffet lines for self-service; ensures proper maintenance and cleaning of tables, chairs, floors, dishes, utensils, and kitchen appliances.
- Stores, refrigerates, and freezes foods safely and economically; monitors expiration dates and disposes of expired items; maintains kitchen stock inventory and processes food purchases and invoices.
- Develops and works within a budget; trains and instructs kitchen staff and volunteers in proper methods and procedures; monitors work in progress for compliance with procedures and health regulations.
Skills and Abilities
- Ability to properly clean kitchen appliances and utensils in accordance with health regulations.
- Ability to store food in accordance with Salvation Army policies and applicable regulations.
- Ability to prepare nutritionally tasteful, safe food for large groups in an economical, efficient, and timely manner in line with policies and regulations.
- Ability to order food and kitchen supplies cost-effectively to maintain inventory levels.
- Strong verbal and written communication skills in English; able to read and comprehend manuals and written instructions; and ability to organize and maintain files.
High school diploma or G.E.D. and three years of experience planning, purchasing, and cooking meals for large groups, with supervisory experience, or an equivalent combination of training and experience.

Physical Requirements and Working ConditionsAbility to meet attendance requirements; ability to cook, taste, and smell food; ability to perform mathematical calculations related to servings and cooking instructions.
Duties involve walking, standing, bending, reaching, twisting, pushing, pulling, kneeling, squatting, and carrying light objects; some sitting may be required.
Work is performed in a kitchen environment with potential exposure to heat from stoves/ovens and cold freezers.
