• Run the day‑to‑day operations of the restaurant and bar, ensuring a seamless and high‑quality guest experience.
• Manage stock levels, supplier relationships and orders to maintain quality while controlling costs.
• Use KPIs, sales data and guest feedback to identify opportunities for improving performance.
• Collaborate closely with senior management on new initiatives, experiences, offers and events.
• Manage rota planning.
• Collaborate with the General Manager on all weddings and events related function sheet planning and coordination.
• Staff management:
  Hiring, training, and scheduling employees while fostering a positive work environment.
• Compliance and Safety: ensuring adherence to health, safety, and licensing regulations.

• Proven experience as a restaurant and bar manager in a similar role.
• Strong leadership skills, with ability to motivate a team.
• Excellent communications and interpersonal skills.
• Lead by example, demonstrating a hands‑on approach.
• Sommelier or mixology experience.
• Strong IT skills to manage reservation systems.
• Licensing qualifications: accredited licensing qualifications to sell alcohol.
• Customer service excellence: handling guest interactions and ensuring a great experience.
