Salary: £35,000 per annum + service charge + overtime

Location: Colchester, Essex (Located just 2 miles outside the town center – reliable transport required)

Hours: Full-time, 5 days a week (Includes weekend shifts)

About Us

We are a brand-new, independent startup launching an exciting automotive destination café and bakery just two miles outside of Colchester. We are building a vibrant space where high quality baking meets a unique community atmosphere. We are looking for a skilled, passionate baker who wants to be a key part of our journey and make a real impact from day one.

The Role

As our lead baker, you will be responsible for producing a high-quality range of breads, pastries, and baked goods. This is a hands‑on role in a brand-new space, offering the chance to showcase your craft and maintain exceptional standards of consistency and flavor.

Key Responsibilities
  • Preparation and baking of breads, sourdoughs, pastries, and daily specials.
  • Managing dough production from scratch, demonstrating complete control over fermentation proofing, and baking variables.
  • Maintaining high standards of food hygiene, safety (HACCP), and kitchen cleanliness.
  • Managing ingredient stock, minimizing waste, and ordering supplies.
  • Contributing ideas for seasonal menu rotations and product development.
About You

You are a dedicated professional who takes immense pride in the craft of baking. You thrive in a production environment but retain a deep respect for traditional methods.

Skills and Experience Required
  • The Perfect Blend of

    Skills:

    You must possess extensive experience with both machine mixing/kneading for commercial volume and traditional hand‑kneading techniques.
  • Proven Track Record: Experience working in a professional bakery or high-volume café kitchen.
  • Technical Knowledge: A deep understanding of baker’s percentages, temperature control, and sourdough culture management.
  • Reliability: Early mornings are the backbone of this industry; punctuality and a strong work ethic are non‑negotiable.
  • Location & Transport: Because we are located 2 miles outside of Colchester town centre, public transport may be limited during early morning start times. A valid driver’s license and independent transport are highly recommended.
