Tennessee Pass Cookhouse is a fine-dining, backcountry restaurant located 1 mile into the National Forest and connected to a cross-country skiing resort about 15 minutes north of Leadville. The Cookhouse serves a multi-course, wild game and local ingredient inspired dinner menu and elevated lunch menu. This job is best suited for hardworking and sociable employees who hold themselves to a personal standard of excellence and excel in communication and customer service.

Qualifications:
- Must be 18+ with a current and valid Drivers License
- High School Diploma or GED preferred
- Previous chef, line cook, or professional food preparation experience preferred but not required
- Food service certification or training is required; if not already certified, we will supplement the cost
- Ability to work effectively as part of a team
- Strong attention to detail and ability to work well in a fast-paced environment
- Basic knowledge of kitchen equipment and appliances
- Knowledge of dietary restrictions
- Weekend & Holiday availability
- Familiar with operation of Point of Sale systems and cash handling
- Snowmobile and UTV experience preferred but not required
- Excellent work ethic, dependability, customer service & communication skills
- Must be able to lift 50lbs
- Oversee the entire kitchen operation, including food preparation, cooking, and presentation
- Hiring and managing kitchen staff
- Researching and developing new dinner and lunch menus seasonally
- Safely prep and store food, with industry standard procedures
- Follow recipes and ensure consistency across product
- Meat Fabrication
- Daily cleaning of the Nordic Center kitchen and Cookhouse kitchen
- Maintain a clean and safe working environment, adhering to all food safety and health regulations
- Dishwashing
- Leading/Assisting putting away food orders properly

The Cookhouse Chef position is based inside and outside, and is exposed to temperature extremes (above 85 degrees and below 20 degrees), sun and wind exposure, inclement weather (rain, snow, ice) and high altitudes (10,500+ feet).
Physical Requirements:Must be able to walk on even/uneven/slippery terrain, climb/descend even/uneven/slippery terrain, climb/descend stairs and ladders, stand and/or sit for long periods of time, bend, stoop, reach, push, pull, lift objects which may be heavy, etc.
Seasonal Status:This is a winter seasonal position with an expected season of late November 2024 through mid April 2025. Employment in subsequent seasons is not guaranteed.
