Food Service Supervisor, Field Camp

Location: McMurdo Station, Antarctica Field Camp

Sector/Dept: Gana-A'Yoo Services Corporation (GSC) Antarctica

Reports To: Culinary Manager

Essential Duties and Responsibilities
  • Produce high quality meals in accordance with fluctuating population; maintain clean and sanitary work areas, equipment, and tools.
  • Serve as senior food services representative and assist in all kitchen, serving, and dining area tasks.
  • Motivate others in remote, physically challenging, and atypical work environments.
  • Adapt to difficult situations and limited resources during camp set up and take down; accommodate extended working hours.
  • Monitor water level in kitchen; assist in facilitating snow supply to snow melter or stock pot for water production.
  • Monitor condition and stock of food at outside food storage locations; shovel excess snow as needed.
  • Coordinate weekly food-pulls from cargo line and freezer cave.
  • Monitor access to freezer cave and assist in keeping doors free of snow.
  • Maintain wholesomeness of all fresh, frozen, and dry food products.
  • Communicate and coordinate with Sous Chefs daily for timely utilization of leftovers and production information.
  • Interact with customers to obtain feedback on food quality, service, menu selection, and sanitation; present information to Camp Supervisor and make adjustments.
  • Conduct production meetings and menu planning meetings with Sous Chefs.
  • Monitor availability of ingredients; adjust when necessary.
  • Ensure proper labeling, dating of food, and adherence to recipes and cooking techniques.
  • Maintain superior sanitation and safety standards within kitchen, serving, and dining areas.
  • Minimize food waste in accordance with accepted waste management guidelines.
  • Oversee food service personnel on proper separation and disposal of food waste materials.
  • Instruct personnel on proper use, care, and cleaning of equipment.
  • Assist with production adjustments based on population fluctuations.
  • Plan menus, order, and receive food as needed.
  • Keep accurate inventories of all food service equipment and food items.
  • Act as personnel representative to monitor morale and recommend improvements.
  • Assign tasks and projects to personnel to maintain overall organization of the food service department.
  • Stand for up to 12 hours a day and lift maximum safe weights.
  • Implement and maintain safe workplace program and ensure safety is a priority.
  • Report safety incidents, injuries, and near-misses to appropriate parties.
Education and Experience
  • High school education or GED required; graduate of culinary arts or apprenticeship program preferred.
  • Five years supervisory experience in a high volume food service capacity accepted in lieu of degree.
  • Serv Safe Food Handler certificate required prior to deployment; valid driver’s license required.
  • Minimum of 7 years cooking experience with 3 years supervisory responsibilities in high volume facilities.
  • Previous experience with Food Services in Antarctica may be accepted in lieu of minimum experience.
  • U.S. citizenship or permanent residency required.
