Executive Sous Chef – Hotel del Coronado, A Curio Collection by Hilton

Hotel del Coronado is an iconic 28‑acre Victorian beach resort that recently completed a $400M renovation. With 750 rooms, cottages, and villas, 65,000 square feet of banquet space, and 10 food and beverage outlets, the property offers a dynamic culinary environment. The Executive Sous Chef will oversee operations in all restaurant outlets and banquet operations, managing 10 managers and reporting to the Executive Chef.

• Assist the Executive Chef in directing and overseeing all culinary operations, including preparation, production, and presentation of hotel meals.
• Ensure compliance with food safety, sanitation, and alcohol regulations.
• Conduct team member performance management: supervision, counseling, training, scheduling, and recognition.
• Interact with guests and clients to monitor satisfaction, address issues, and implement improvements.
• Develop and implement menu selections for special banquet themes and events in partnership with the Executive Chef and Director of Food & Beverage.
• Maintain cost controls and contribute to overall profitability.

• Strong banquet experience and proven track record in menu development and recipe R&D.
• Experience leading and developing kitchen teams.

The annual salary range for this role is $120,000–$140,000, based on applicable and specialized experience and location.
