Position: Trimmer (Nights)
When premium meat needs to meet exact customer specifications, the quality of the finish matters just as much as the cut itself. As a Trimmer (Nights), you’ll use your knife skills across beef, lamb, pork, poultry and game, producing consistently high standards while maximising yield in a professional production environment.

Your responsibilities as Trimmer

Trim meat to precise customer specifications, removing excess fat, sinew, cartilage and bone while maximising yield
Prepare primal and sub-primal cuts ready for further processing
Support deboning and the breakdown of carcass sections when required
Maintain high standards of product presentation, weighing, labelling and preparation for dispatch
Use knives and butchery equipment safely while following HACCP, food safety and hygiene procedures
Meet productivity and yield targets without compromising product quality
What we’re looking for in a Trimmer

Previous experience within meat trimming, boning, butchery or skilled knife work
Experience handling multiple species, including beef, lamb and pork
Excellent knife skills and a strong understanding of meat specifications and trimming standards
Good knowledge of food hygiene, HACCP and health and safety requirements
Ability to work effectively within a chilled food production environment

Working hours:

Monday–Friday, 8:00pm–4:00am
