ABOUT THE ROLE:
Provides supervision for the Nutrition and Environmental Services Departments to provide quality food service, nutritional care, and a clean and sanitary environment for the patient population, visitors, guests and staff. Provides administrative direction of menus, food preparation and service, purchasing, sanitation standards, safety practices and personnel utilization. Directs, coordinates, supervises and participates in the work activities of Nutrition and Environmental Services staff.

- Oversees the departmental budgetary procedure to ensure proper operational and capital planning, appropriate and efficient use of resources, and consistent compliance to budgetary and fiscal controls.
- Responsible for hiring, training, supervising, coaching, mentoring, retaining and evaluating of staff.
- Directs, coordinate, supervises and participates in the work activities of Nutrition and Environmental Services staff, to include the proper use/following of menus, standardized recipes, sanitation and cleaning, cash register, equipment, food and supplies, and adherence to departmental policies and procedures.
- Works collaboratively and conveys relevant information to the Clinical Dietitian regarding nutrition issues or concerns with patients: ensures confidentiality in matter relating to patient/family.
- Facilitates catering event planning with internal/external customers.
- Develops recipes and produces items for retail and patient meals.
- Ensures compliance with federal and state regulations related to dietetics and the hospital environment.
- Responsible for purchasing food and related supplies, as needed.
- Operates and maintains applicable facility equipment.
- Maintains professional growth and development through seminars, workshops, and professional affiliations to keep abreast of latest trends in field of expertise.
- Participates in and/or leads meetings, committees, strategic planning and lean projects as assigned.
High school diploma or equivalency required. Associates degree or above preferred. Registered Dietetic Technician (or eligible) preferred. Minimum of one (1) year previous experience working in a nutritional service capacity required. Minimum of two (2) years in environmental services strongly preferred. Management experience preferred.
Valid State of Nebraska driver's license required. Verification and maintenance of responsible driving record per facility standards required. Certified Dietary Manager - Certified Food Protection Professional (CDM CFPP) required within one (1) year of hire date.
