Overview
Sous Chef is responsible for assisting in the overall success of the food program, adhering to client culture and guidelines, OSHA, Health Department regulations, and Guckenheimer food quality standards. This position oversees daily operational tasks, recipe execution, production sheets, pars, food purchasing, sanitation, and safety. The Sous Chef motivates, trains, develops, and directs all employees to accomplish operational objectives.
The general responsibilities may include additional duties identified by Guckenheimer to meet business needs and client requirements.
Responsibilities- Ensure kitchen organization and cleanliness to provide a safe environment for employees and guests
- Follow Workplace Safety guidelines, policies, and SOPs daily
- Follow Food Safety guidelines, policies, and SOPs daily
- Follow HACCP guidelines, policies, and SOPs daily
- Follow all internal audit guidelines, policies, and SOPs daily
- Follow guidelines, policies, and SOPs daily
- Provide the highest quality of service in accordance with ISS/Guckenheimer and client standards
- Use food preparation procedures in line with federal, state, and local guidelines to ensure high quality food service
- Assist Executive Chef with administrative duties including attendance, human resources, and other timelines as directed
- Monitor and review HACCP logs
- Assemble RTE menu items per recipes, following core standards for ISS/GEI for presentation, packaging, and labels
- Clean and sanitize work areas and equipment per ISS/Guckenheimer and regulatory rules
- Support management with monthly inventory
- Notify management of concerns with product quantities, food/equipment safety, or other issues needing management attention
- Attend all meetings of the day
- Report accidents and injuries promptly
- May perform other duties as assigned
- Ensure high quality food items are creatively prepared and presented cost-effectively
- Follow Guckenheimer’s food standards guidelines
- Purchase products and ingredients following Guckenheimer’s purchasing standards and sustainability commitments
- Collaborate with management to ensure display, catering, café service, and culinary setup meet account standards
- Dispose kitchen waste properly in the most sustainable manner as directed by the client
- Train and supervise staff
- Supervise uniform standards following the employee handbook and account guidelines
- Assist in staff reviews, coaching sessions, and disciplinary actions
- Ensure training standards are met and documented for direct hires
- Represent the company courteously, efficiently, and professionally in all interactions
- Interact with customers and resolve complaints in a friendly, service-oriented manner
- Communicate with the client honestly, accurately, and in a timely manner; professional and organized written communication
- Review weekly participation and recommend changes that may affect food budget or service levels
- Maintain and monitor labor with business forecasts and the budget
- Ensure food cost meets budgetary goals each week
- Ensure the cafe meets standards and oversee daily appearance and upkeep as directed by the client
- Supervise proper presentation of food
- Adhere to purchasing standards and sustainability commitments; reflect seasonal and fresh decor in presentation
- Edit daily signage for correct spelling, allergens, and descriptions
- Be dressed according to the dress code
- Work under pressure and meet deadlines during peak periods
- Stand for long periods (up to 8 hours)
- Reach, bend, stoop, push/pull, and frequently lift up to 25 pounds
- Use team lift or carts for heavy loads as needed
