Restaurant Manager – Fine Dining | Michelin-Starred

Black Pearl Consult is hiring an experienced Restaurant Manager to oversee the day-to-day operations of a premium fine-dining restaurant, ensuring high standards of service and operational excellence.

The ideal candidate must have proven experience working in a Michelin-starred or Michelin-recognised restaurant environment and a strong understanding of luxury hospitality standards, exceptional guest service, fine-dining operations, team leadership, and commercial performance.

This role is suited to a hands-on hospitality professional with a strong background in Michelin-level dining, who can maintain exceptional service standards while ensuring smooth, efficient, and commercially successful restaurant operations.

Oversee the daily operations of the restaurant, ensuring consistently high standards of service and guest experience.

Lead, supervise, and motivate the front-of-house team to deliver exceptional service.

Maintain Michelin-level standards of hospitality, presentation, service, and attention to detail.

Ensure compliance with restaurant policies, operational procedures, health and safety requirements, and food hygiene standards.

Manage restaurant opening and closing procedures.

Monitor reservations, table allocations, guest flow, and overall restaurant capacity.

Handle guest feedback, special requests, and service recovery professionally.

Build strong relationships with regular and VIP guests.

Conduct team briefings, training, coaching, and performance evaluations.

Coordinate closely with the kitchen and back-of-house teams to ensure smooth service.

Monitor staffing levels, scheduling, attendance, and manpower requirements.

Support inventory management, stock control, ordering, and cost management.

Monitor restaurant sales, revenue, expenses, and key performance indicators.

Assist in achieving revenue and profitability targets while maintaining service quality.

Ensure the restaurant consistently meets luxury and fine-dining service standards.

Identify operational issues and implement appropriate solutions promptly.

Prepare and submit operational reports to senior management.

Support special events, private dining, and VIP functions when required.

Candidates should ideally have:

Minimum 5 years of experience in restaurant management or a similar leadership position.

Previous experience in a Michelin-starred, Michelin-recognised, or high-end fine-dining restaurant is required.

Experience in luxury hospitality, premium restaurants, or internationally recognized dining establishments is highly preferred.

Strong knowledge of fine-dining service standards and restaurant operations.

Proven experience managing and developing front-of-house teams.

Strong understanding of restaurant financials, cost control, sales, and profitability.

Excellent guest relations and communication skills.

Strong leadership, organizational, and problem-solving abilities.

Ability to work effectively in a fast-paced and demanding hospitality environment.

High attention to detail and a strong commitment to service excellence.

Professional appearance and excellent interpersonal skills.

Ability to work flexible hours, including evenings, weekends, and public holidays.

International hospitality experience is an advantage.
