R&D Bakery Engineer Enriched Dough
We are not looking for a traditional baker. We are looking for a Bakery Engineer.
At Bespoke Food Concepts, we treat gastronomy with the absolute precision of a tech company. For our flagship "Fast-Fine" dining concept, launching in Dubai, we are engineering a proprietary hybrid bun.
This bun is not a standard bakery product. It is a high-performance platform built to excel under extreme commercial transit conditions. We need a visionary professional who can take this from lab-stage R&D to stable, scalable commercial manufacturing.
What Makes This Role Different:The Engineering Problem
You are not maintaining someone else’s recipe or working a standard night shift. You are solving a complex food-science puzzle and building a scalable operating system around the solution.
If you understand exactly how starch gelatinization alters moisture retention, why cold retard shapes the aromatic profile of enriched dough, and how fat percentages affect crumb flexibility under heat, this playground is yours.
Whom We Are Looking For- The Craft: 2+ years of intensive hands-on work with enriched doughs, milk breads, or premium brioche. You don't need a Shokupan certificate, but you must master the science of high-hydration, scalded flour, and slow fermentation.
- The Mindset: You think in systems, not single recipe cards. You have a proven track record of writing clear, bulletproof Standard Operating Procedures (SOPs).
- Industrial Synergy: Experience collaborating with external industrial central bakeries (B2B production partners) or an R&D/Product Development background is a massive competitive advantage.
- Stage 1 — The R&D Contract (June – July 2026)
- Compensation: Fixed fee for the 2-month project.
- Objective: Finalize and lock the formula in our lab. Run exhaustive parametric test bakes across variables. Deliver a documented, stable formula ready for external manufacturing handover.
- Stage 2 — Full-Time Executive Integration (August 2026+)
- Compensation: Competitive full-time corporate salary package + full UAE visa sponsorship + comprehensive medical insurance.
- Objective: Launch and oversee daily commercial production at our strategic partner bakery. Establish strict QC protocols. Lead R&D for our upcoming natural color-coding bun line and lay out the blueprint for wider GCC franchise scaling.
