Job Purpose
To manage and optimize the end-to-end supply chain for food and non-food items, ensuring cost efficiency, quality, timely availability, and compliance with food safety standards across all outlets.
Key Responsibilities- Source, negotiate, and manage suppliers for food, beverages, packaging, and non-food items
- Ensure consistent quality, pricing, and timely supply across all outlets
- Develop and maintain approved vendor lists
- Conduct regular supplier performance reviews
- Monitor stock levels to avoid shortages, over-stocking, and wastage
- Implement inventory controls (FIFO/FEFO, par levels, expiry tracking)
- Control food cost, COGS, and variance vs budget
- Coordinate stock clearance of slow-moving or excess inventory
- Plan and manage logistics for central kitchen and outlet deliveries
- Ensure on-time deliveries and proper cold-chain management
- Coordinate with warehouses, transporters, and store teams
- Ensure compliance with food safety, hygiene, and local regulatory standards (HACCP, municipality guidelines)
- Monitor product specifications, shelf life, and storage conditions
- Handle supplier audits
- Work closely with operations and finance on demand forecasting
- Support new store openings, menu changes, and seasonal demand (Ramadan, festivals)
- Align purchasing plans with sales forecasts
- Manage ERP / inventory systems and ensure data accuracy
- Prepare regular reports on inventory, food cost, wastage, and supplier performance
- Provide insights and recommendations to management
- Strong knowledge of F&B supply chain and procurement
- Expertise in cost control, inventory management, and negotiations
- Understanding of food safety and regulatory compliance
- Analytical and problem-solving skills
- Strong stakeholder and vendor management
- Bachelor’s degree in Supply Chain, Logistics, Business, or related field
- 7–10 years of experience in F&B / hospitality supply chain
- Experience managing multi-outlet or chain restaurants preferred
