With stunning resorts located across the globe and exciting expansion planned, Kerzner International currently has a fantastic opportunity for a Chef de Partie to join the One&Only team at One&Only The Palm Hotel in Dubai.

With the global growth of our brands, the Chef de Partie plays an essential role in the continued success of the Resort. Your responsibilities extend beyond preparing high-quality dishes, you will contribute to developing strong working relationships with colleagues and supporting an exceptional culinary experience for our guests. You will be responsible for overseeing your designated kitchen section, ensuring consistency in food quality, maintaining cost control, and upholding our company’s core values.

This role also involves supervising daily kitchen operations, training junior staff, managing mise-en-place, and maintaining the highest standards of hygiene and food safety.

Key Duties and Responsibilities
  • Prepare, cook, and present dishes within your designated section according to the kitchen standards.
  • Assist with the creation of menu items and daily specials.
  • Ensure consistency and quality across all food items.
  • Monitor stock levels, place orders, and minimize waste.
  • Maintain high standards of cleanliness and hygiene in your section.
  • Ensure compliance with food safety regulations and HACCP guidelines.
  • Train and supervise Commis Chefs and kitchen assistants.
  • Collaborate with the Sous Chef and Head Chef on kitchen operations.
  • Ensure timely preparation and smooth flow during service hours.
  • Handle equipment with care and report any maintenance needs.
  • Create new cocktail recipes and bring innovative ideas to the department.
  • Coordinate with other kitchen sections to ensure smooth and efficient service.
  • Support in planning and managing food preparation for banquets, events, and high-volume periods. Inspect ingredients for quality and freshness before use.
  • Ensure proper storage, labeling, and rotation of all food items (FIFO).
  • Assist in developing new recipes and improving existing ones.
  • Monitor portion control to maintain cost effectiveness and minimize wastage.
  • Adhere to company guidelines regarding food safety, cleanliness, and equipment use.
  • Participate in regular kitchen briefings and team meetings.
  • Maintain accurate records for temperature checks, cleaning schedules, and food usage reports.
  • Ensure all kitchen tools and equipment in the section are properly cleaned, maintained, and stored.
  • Address and resolve any issues within the section promptly to avoid delays during service.
  • Step in to assist other sections when necessary to support the overall kitchen operation.
  • Help maintain a positive, professional, and team-oriented work environment.
  • Comply with all health, safety, and sanitation standards required by local regulations.

A suitable candidate should have a minimum of 2–4 years of experience in an upscale 5-star hotel or resort kitchen environment. Strong culinary knowledge and a solid understanding of food preparation and kitchen operations are essential.
