The RoleThis is a senior leadership position for someone who genuinely loves the bar but understands the entire building.
As Assistant General Manager, youll be the General Managers right-hand person, sharing responsibility for the smooth, compliant running of the venue while taking full ownership of bar performance. This is a hands‑on role in a high-volume environment where structure, pace, and personality all matter.
Youll bring discipline, commercial awareness, and strong leadership to ensure the bar operation is immaculately run, well-staffed, fully compliant, and delivering healthy margins without ever losing energy on the floor.
The PurposeTo support the General Manager as second-in-command while owning all aspects of bar operations, including stock control, margins, rotas, training, and bar compliance.
Key Responsibilities Bar Leadership & Performance- Take full ownership of all bar operations across the venue
- Lead bar teams on shift, setting clear standards for service, speed, and accuracy
- Be a visible, confident presence during peak trading periods
- Deliver consistent service across every bar, every shift
- Full responsibility for bar stock management, ordering, and stocktakes
- Deliver accurate, disciplined, and auditable stock counts
- Control wastage, investigate discrepancies, and protect GP
- Understand and manage margins, pour costs, and percentage targets
- Treat stock as cash, with zero tolerance for poor controls
- Joint responsibility for rotas alongside the General Manager
- Build rotas that balance exceptional service with labour efficiency
- Adjust staffing in line with trading patterns and events
- Maintain control of wage percentages and staffing levels
- Share responsibility for site compliance with the General Manager
- Ensure all bar compliance standards are met consistently
- Support Food Safety and Health & Safety processes across the venue
- Maintain clean, safe, and compliant bar environments
- Ensure teams understand and follow all compliance procedures
- Lead bar training, onboarding, and skills development
- Ensure all bar staff are trained to a consistently high standard
- Build confident, capable teams who perform under pressure
- Support performance management with fairness, clarity, and consistency
- Act as number two on site, stepping up in the GMs absence
- Support wider site operations during events and peak periods
- Work collaboratively with security and operations teams
- Help maintain strong communication and consistency
- Proven experience leading high-volume bar operations
- Strong commercial understanding of stock, margins, and labour
- Confidence managing rotas, compliance, and reporting
- Natural authority and credibility on the floor
- Calm, organised leadership under pressure
- Pride in running tight, professional, high-performing operations
