Overview

The Assistant Director of Restaurants requires a tactical leader who executes our strategies to create an operationally superior restaurant environment. The ideal candidate will demonstrate our leadership competencies, enhance business and customer satisfaction, and establish customer service standards.

Responsibilities
  • Open new restaurants
  • Ensure current restaurants are continuously successful and profitable
  • Monitor financial and budgetary transactions to ensure efficient operation and expenditures within budget limitations
  • Develop marketing strategies with implementation of advertising and promotional campaigns
Essential Functions
  • Ensure compliance with applicable Tribal, Federal and other laws and gaming regulations and Kickapoo Lucky Eagle policies and procedures.
  • Ensure the highest possible standards of guest services by properly listening and responding to guest and team member concerns and questions.
  • Set standards and expectations for front and back of house outlet staff and follow up accordingly.
  • Maintain a commitment to customer service and guest satisfaction.
  • Prepare forecasts and reports and assist in the development of the food and beverage budget.
  • Enforce high standards of hygiene and sanitation within the department.
  • Track payroll and revenue daily.
  • Establish par levels for supplies and equipment.
  • Manage timely completion of performance appraisals.
  • Monitor time punches in payroll system, ensuring accurate payroll for all associates.
  • Monitor departments' systems and equipment to ensure their optimum performance.
  • Develop and implement controls for expense management.
  • Implement strategies to continually improve revenues.
  • Assist with the development, training and inspiration of staff for promotion.
  • Provide prompt follow-up to all guest concerns.
  • Assist the Director of Food & Beverage with the design and implementation of training programs.
  • Empower the team to exceed service standards.
  • Instill a calm, organized approach in all stressful situations.
  • Work with HR to recruit and hire staff.
  • Ensure compliance for proper new hire and termination paperwork.
  • Maintain a safe and pleasant work environment.
  • Promote high team member morale.
  • Recommend discipline and/or termination when appropriate of team members.
  • Take a proactive approach to coaching and counseling.
  • Resolve guest issues promptly and with great care and effectiveness.
  • Maintain a strong knowledge of hospitality trends, especially food & beverage.
  • Provide general information for guests.
  • Utilize labor management tools to schedule and control labor costs.
  • Demonstrate and promote KLECH core values and MAD skills.
  • Manage and maintain security of confidential information entrusted to the position.
  • Attend and satisfactorily complete all required training as assigned.
  • Monitor compliance with Federal currency transaction reporting requirements, Title 31 requirements and IRS Currency Transaction Reports and property established Anti-Money Laundering policies. Maintain accurate MTL, MIL, CTR and SAR as needed.

Minimum Qualifications
  • High School Diploma or GED.
  • Three to five years of restaurant management experience.
  • Four or more years of multi-unit restaurant management experience.
  • Strong communication skills in English (written and oral). Spanish or other language skills are a plus.
Other Criteria
  • Qualified Kickapoo Traditional Tribe of Texas Members and qualified Native American preference is observed.

  • Ability to maintain effective relationships with the General Manager, Directors, Managers and all staff.
  • Ability to work under pressure in a fast paced, stressful environment.

  • Positive attitude with strong organizational and leadership qualities.
  • Ability to perform basic arithmetic operations and manage measurements.
